Wattalapam – the way the professionals do it

The recipe on this blog that has been most frequently visited, by far, is for wattalapam. Since I posted it in January this year, the page has had over 350 hits! I found my wattalapam recipe in a newspaper several years ago, and until visiting Sri Lanka last week had not actually tried anyone else's wattalapam. So I jumped at the chance to order it while at the Taj Samudra Hotel in Colombo. Here's what their version looked like:


I usually cook and serve mine in individual ramekins, and have cut down on the amount of sugar the dish usually has, but on the whole the one at the Taj tasted a lot like mine! (Good to know.)
