Going (coco)nutty

When I was younger we often heard warnings about consuming coconut products. They were said to be full of saturated fat. In the perplexing way that nutritional information seems to twist and turn, they're now seen as healthy: full of vitamins, minerals and enzymes. Oh, and supposedly helpful in controlling blood sugar. I'm glad coconuts are no longer demonised, as I really like them!

Here are some delicious things you can do with coconuts:

Brekkie ideas
Nutty maple granola
Coconut risotto

Lunch or dinner ideas
Vegetable laksa
Pumpkin soup with drizzled coriander pesto
Sri Lankan lentil curry
Coconut split pea soup
Pumpkin and pea curry
Vanuatu salad
Chickpea delight
Potato and pea curry
Tofu in lemongrass coconut milk
Thai green eggplant curry
Bagus mushroom soup

Sweet stuff
Coconut ice cream (or rocky road ice cream)
Chocolate nut cake
Black rice pudding
Chocolate echidna slice
Marshmallow treats
Wattalapam
Lolly cake

Or ... just eat 'em! Yum.
